Why the whole menu stayed open
Most Valentine’s menus close the kitchen down to a fixed list. This one did the opposite — the entire regular menu remained available, and the specials were additions rather than replacements.
It is a small decision with a large effect. A couple where one person wants charbroiled oysters and ribeye and the other wants a burger can both have a good evening, and neither has to apologise for it.
The wine upgrade
Sixteen dollars per person converted three courses into three courses plus a bottle of wine for two. At that price the bottle is effectively at retail, which is unusual on the most heavily booked night of the restaurant year.
